The proteins in lapillu and asteriscu of wild carp from the Miyun Reservoir in Beijing were extracted. According to the difference in solubility, the proteins can be classified into three groups, namely, water soluble protein(WSP), acid soluble protein(ASP) and acid insoluble protein(AIP). Using high performance liquid chromatography (HPLC), X-ray diffraction(XRD) and Fourier transformation infrared spectra(FTIR), the authors characterized the sorted proteins from different otoliths. It is found that the three types of proteins in lapillus and asteriscus have different characteristics, and such differences may be responsible for different kinds of crystalline state in calcium carbonate.
